Each location has an onsite butcher for the 18 to 24-day dry-aging process. The Capital Grille is open for dinner daily, and is open for lunch Monday through Friday. Additionally, their wine list is comprised of over 350 selections, including some of the most highly allocated and sought-after wines in the world.
